Plenty of products that look like chocolate are not, legally. Paste the ingredient list from the wrapper and this checks it for the tell-tale signs: substitute fats, missing cocoa butter, sugar first, artificial vanilla.
What makes chocolate “real”
Chocolate is defined by its fat. Real chocolate gets its fat from the cocoa bean itself, as cocoa butter. Cheaper products swap some or all of it for palm, shea or coconut fat, which are cheaper and easier to handle but melt differently and taste waxier.
